1st CHICKEN WITH AVOCADO AND JICAMA SANDWICH

CHICKEN with Avocado and Jicama Sandwich: Achiote-rubbed chicken breast, avocado spread of Hass (yeah, the most inferior kind per Guatemalan local), chipotle chile, red onion, cilantro, lime (yeah, it's an elevated guac) and jicama marinated in lime and honey on homemade from scratch focaccia bread. Well, I had 2 halves, so you can imagine how tasty this was.

Hey, it’s National Fried Chicken Sandwich Day and I gotta say, this is the best damn FCS I’ve ever had. The shatteringly crispy, crunchy, light and flavorful batter encasing the juicy, tender chicken is pretty phenomenal. Still in disbelief that I made this.

I inadvertently pounded the cutlets (you can barely see them in the cross section of the sandwich). So I guess it can’t really be a Katsu Sando anymore. But maybe I prefer it that way. The cutlet sat on a bed of iceberg atop a crispy, toasted and buttered slice of Shokupan before getting loaded up with garlic tonkatsu sauce, tomato, cucumber and another toasty, buttery slice of milk bread. #itcouldntbeakatsu #katsusandoish
