Happy National Potato Day! There is nothing so down to earth and so deeply satisfying as a baked potato!!!

Very tasty, relatively fuss-free and a great accompaniment to roast chicken.

This was a lil’ high maintenance but worth trying.

I could eat these almost everyday.

Incredibly crisp and crunchy on the outside, with creamy potatoey centers.

Golden brown and crispy on the outside, soft and moist on the inside. Perfect with ketchup!

Can’t say no to taters.

I felt the same way about the mashed potatoes.

My best bet at evoking some imaginary sense of being somewhere in Xi’an, snacking on street food as I’m startled by lit firecrackers along the streets; perhaps in the same way the heat and spice of these potatoes are startling my tastebuds with their peculiar numbing effect. 😳

Crusty exteriors + creamy interiors make these the perfect side to a roast chicken dinner.

Did not enjoy this as much as I thought I did the last time. It was too peppery.

Essentially, glorified tater tots from fȳr. Actually, I think I prefer tater tots 🙈
